INSTANT POT CHICKEN PARMESAN

This quick and easy Chicken Parmesan is the answer to your weeknight dreams!! I made it last night and both my girls said PLEASE MAKE THIS MORE OFTEN! It was literally ready in under 30, quick clean up since it's made in Instant Pot. I adapted this recipe from Skinny taste and used a jar of sauce, but you could make your own and make it even better!
1 teaspoon extra virgin olive oil
2 garlic cloves, thinly sliced
2 cups prepared marinara sauce
4 tablespoons grated Parmesan cheese
Freshly ground black pepper
6 thin chicken cutlets. (I used 3 chicken breasts and sliced them in half)
½ teaspoon pink salt, or more to taste
½ teaspoon dried italian seasoning
6 ounces fresh mozzarella cheese, sliced thin
Chopped basil, for garnish (optional)
Using the sauté function heat the oil in the instant pot. Stir in the garlic and cook until just turning golden, about 1 minutes. Stir in the marinara sauce, 3 tablespoons of the Parmesan, and 1/4 teaspoon pepper.
Season the chicken with the salt, italian seasoning, and pepper to taste. Add the cutlets into the sauce, overlapping as little as possible, then spoon the sauce over to cover the chicken.
Lock the lid into place and cook on low pressure for 3 minutes. Manually release the pressure.
Remove from pot (place in oven safe dish) and top with mozzarella and the remaining 1 tablespoon Parmesan evenly over the chicken.
Broil until the cheese has browned, 2 to 3 minutes. Sprinkle with basil, if desired.
Serve with zoodles or side of pasta.
