Paleo Cinnamon Raisin Muffins



Thank you to PALEO RUNNING MOMMA for this AHHMAZING recipe! Made from WHOLE CLEAN ingredients and my kids love them - sure does beat feeding them chemical laden packaged mini muffins! I did make a batch and left raisons out and added a few chocolate chips for my youngest - this made her especially happy!

I highly recommend these if you are cinnamon raisin lovers!

What you need:

  • ½ cup sweet potato mash

  • ¼ cup pure maple syrup

  • ¼ cup organic coconut oil, melted & cooled to almost room temp

  • 4 eggs

  • 1 tbsp raw apple cider vinegar

  • 1 cup + 5 tbsp blanched almond flour

  • 3 tbsp organic coconut flour

  • ¼ cup tapioca flour

  • 1 tsp baking soda

  • 2 tsp cinnamon

  • ¼ tsp salt

  • ½ cup raisins

What you do:

  1. Preheat your oven to 350 degrees & prepare muffin pan by lightly greasing with coconut oil, or lining with muffin liners. I used Silicone Liners

  2. In a large bowl, whisk together the eggs, sweet potato, maple, apple cider vinegar & coconut oil

  3. Combine the dry ingredients in a separate bowl, then mix into the wet mixture until moistened, make sure you don't over-mix. Stir in raisins, then transfer the mix evenly to each muffin liner

  4. Bake for 20 minutes in the preheated oven or until a toothpick inserted in the center of one comes out clean.

  5. Allow to cool for a minute in the muffin pan before transferring to a wire rack to cool completely. Store any leftovers covered in the refrigerator.

  6. Enjoy!
