Baked Cilantro Lime Shrimp



One of my kids favorite recipes - they can each eat about a pound of shrimp if I would let them! These are amazing on salad or even to make shrimp tacos with. Quick, easy and minimal clean up!

Ingredients

  • 2 pounds raw shrimp, I used large

  • 4 Tbsps olive oil or melted unrefined coconut oil

  • 1 bunch fresh cilantro leaves, chopped

  • 1 tsp sea salt, & freshly ground black pepper to taste

  • 4 cloves garlic, minced

  • 3 whole fresh limes juiced

Directions:

Preheat the oven to 375, Arrange shrimp on large baking sheet. Mix together oil, cilantro, sea salt, garlic and lime juice in a medium sized bowl. Whisk ingredients until combined, then add and toss shrimp

Transfer to pan. Bake in preheated oven about 8-10 minutes depending on size of shrimp.

Serve hot and Enjoy!!
