Homemade Chicken Tenders

I am a mom and I am guilty of feeding my kids processed chicken nuggets! They are often quick and easy to make when you’re short on time!!! However the MORE AWARE of exactly what is in them - the more I am grossed out and have made it a point to try to find better options.

This recipe is one of them! Both kids love and no one misses that frozen bag of processed junk!

What you need:

  • 4-5 boneless, skinless chicken breast – cut into strips, you could also buy tenderloins

  • 2 cup whole wheat panko bread crumbs , you can use regular whole wheat bread crumbs in place of panko

  • 1 cup Parmesan cheese

  • 1 t Italian seasoning

  • ½ t garlic powder

  • ¼ t cayenne pepper

  • ¼ t pepper

  • 1 egg + 2 whites

  • 1/2 – 1 C flour (I use wheat/white blend)

What you do:
  • Preheat oven to 400°.

  • Spray a large pan with cooking spray.

  • Combine eggs and whites in a shallow bowl.

  • Combine bread crumbs, Parmesan and seasonings in another bowl.

  • In a third bowl, add flour.

  • Take chicken pieces and roll in flour, shake off excess and add to egg mixture, then press into the breadcrumb mixture until thoroughly coated on each side.

  • Set on the prepared pan. Continue until all of the chicken is coated. Lightly spray the top sides of the chicken with cooking spray.

  • Cook for 12-14 minutes. Remove pan from oven, flip pieces over and return to oven for another 12-14 minutes.

  • Enjoy - my kids like them with BBQ or Ketchup ....
