Whole30 Sweet Potato Sloppy Joes

Whole30 approved Sloppy Joes are so amazing!!!! Everyone in this house loved them!! I ate mine on Sweet Potato Sliders and the family went with soft Hawaiian Rolls... Seriously eating from a can is gross (do yourself a favor check your food using Fooducate app) ... this was super easy, tastes super yummy and is super healthy!!! #Momwins

Ingredients: For Sweet Potato “Buns”: 2 large sweet potatoes with a large diameter sliced into 1/4 inch thick discs 1 Tbsp. olive oil 1/2 tsp. black pepper 1 tsp. salt For filling: 1 Tbsp. oil 1.5 lbs. ground beef 1/2 onion chopped 3 cloves of garlic minced 1 red pepper chopped 1 16 oz can of tomato paste 4 oz. can of green chiles 1 Tbsp. date paste 1 Tbsp. apple sauce 1 tsp. chili powder 1/2 tsp. dry mustard powder 1/2 tsp. chipotle powder 1 tsp. salt 1.5 C. water Directions: Preheat oven to 400* Add all sweet potato bun ingredients to a bowl and toss to coat well Line two baking sheets with parchment paper and spread sweet potato rounds evenly across in one layer, evenly spaced Bake for 45 minutes, flipping halfway through In a large dutch oven or stock pot, heat 1 Tbsp. of oil on medium high heat Once oil is hot, add ground beef and let brown Once cooked through, drain fat Push meat to side of cooking dish/pan and add onions, adding more oil if necessary Reduce heat to medium and cook until tender and slightly browned Add peppers and cook until soft Add garlic and cook for two minutes, continuously stirring Combine meat and onion mixture Add tomato paste, green chilies, date paste, apple sauce, chili powder, dry mustard powder, chipotle powder, salt and water to pot Stir to combine and bring to a simmer Let cook for 15-20 minutes until liquid reduces To serve, layer between two sweet potato “buns”
