Fix Approved Sweet Potato Hash



One of my favorite BREAKFAST sides! That’s right. It might seem interesting to eat sweet potatoes for breakfast, but they are a great substitute for a traditional “white” potato because of their amazing health benefits. Sweet potatoes contain almost twice as much fiber as other types of potatoes– giving them a “slow burning” quality and making them a great source of energy! These beta-carotene rich potatoes are also heart healthy because they are loaded with vitamin B6 and potassium. Potassium helps our body because it plays a large role in lowering our blood pressure by ridding the body of excess sodium and regulating fluid balance. Potassium is also an important electrolyte that helps regulate the natural rhythm of our heart and maintains normal function of the brain. Sounds pretty good to me!

INGREDIENTS 2-4 teaspoons of coconut oil (or spray a cookie sheet with coconut oil spray) 2 medium sweet potatoes, diced 1 purple onion, diced 2 cloves of garlic, minced 1/2 teaspoon cinnamon 1/2 teaspoon turmeric 1/4 teaspoon nutmeg Himalayan sea salt and ground pepper to taste INSTRUCTIONS 1. Preheat oven to 425 degrees. 2. Grease or spray cookie sheet with coconut oil. 3. Add the sweet potatoes, onions, and spices. 4. Cook 20-25 minutes until golden brown.
