Italian Ground Turkey Spaghetti Squash - FIX APPROVED



Want a delicious carb-free alternative to pasta? There's a squash for that.

Ingredients

  • 1 (14oz) can crushed tomatoes

  • 1 lb lean ground turkey

  • 1 cup zucchini, diced (about 1 medium)

  • 1 cup baby spinach

  • 3 cloves garlic, minced

  • 1 T Italian seasoning

  • 1 T Onion Powder

  • 1 tsp Oregano

  • 3 cups spaghetti squash, cooked and scraped (about 1 medium)

  • 8 oz part skim Ricotta cheese

  • 1 1/4 cup Mozzarella cheese, shredded

  • 1/4 cup Parmesan cheese, shredded

  • Parsley, for garnish

Directions

  1. Preheat oven to 375 F

  2. Cut your spaghetti squash in half and remove the seeds. Place face down in a microwave safe dish with a small amount of water and microwave about 12-14 minutes or until fork tender.

  3. Spray a 12" skillet with a light coating of olive oil, garlic and zucchini on medium high heat, add the ground turkey, cook until browned. Add Italian seasoning, onion powder and oregano.

  4. Stir in crushed tomatoes & spinach

  5. In a 9x13 pan, layer half of the following: spaghetti squash, meat and tomato mixture, ricotta and mozzarella cheese, repeat. Top with Parmesan and sprinkle with parsley.

  6. Cover with foil and bake for 15-20 minutes until cheese is melted, uncover and bake an additional 5 minutes until bubbly.
