Shrimp Scampi Zoodles
Quick and easy shrimp scampi that my entire family LOVES - some of them prefer it over pasta but for me Zoodles are a perfect low carb alternative.
What you need:
2 tablespoons coconut oil
1 lb of shrimp
salt and pepper to taste
1 tablespoon of garlic salt
Zest of 1 Lemon
1 lemon, freshly squeezed
2 tablespoons of fresh parsley
freshly grated parmesan cheese
Zucchini Noodles (3 Large Zucchinis spiraled)
What you do:
Melt coconut oil in a large skillet over medium high heat.
Add shrimp, salt and pepper, garlic salt. Cook, stirring occasionally until the shrimp turns pink. About 2-4 minutes.
Stir in lemon zest & lemon juice .... Bring to a simmer.
Stir in fresh parsley and Parmesan cheese.
Toss with Zoodles and garnish with more Parmesan and parsley. Serve immediately.
