InstantPot Corned Beef



There are a TON of recipes on the web for Corned Beef in the Instant Pot - this one is pretty simple but the difference here is that my family LOVES Corned Beef and most recipes are for 2-3 pounds so this mamma decided to be brave and throw 2 briskets in her pot and hope for the best! Turns out I did great! I used 2 beefs - one was 2.5 and the other 2.8 - Put them on the rack one overlapped the other and after 90 min with the directions below we had an amazing dinner! Hope your family enjoys as much as mine did!

What you need: 5-6 lb. corned beef brisket, including spice packet 1 (11 oz) Bottle of Guinness Stout 1 Cup Beef Broth 2 lbs petite red potatoes, quartered 1 Package Carrots 🥕 (cut in quarters) 1 head green cabbage, cut 4 large wedges

What you do: 1. Put rack in pot & place corned beef brisket on top. Sprinkle spice packets on top, then pour beer & broth over top. 2. Cook Manual high pressure for 90 minutes. Once time is up, let Natural release 10 min then quick release pressure. Remove corned beef to a platter and cover with foil. Let rest while cooking the vegetables. 3. Without discarding liquid, add potatoes, carrots, and cabbage to pressure cooker. Cook at high pressure for 4 minutes. Do a quick pressure release and remove vegetables.
