Instant Pot Beef & Brocolli (21 Day Fix & Whole30 Approved)



My second Instant Pot dinner recipe was another HIT!!! As part of a really large Instant Pot community on FACEBOOK - you read a ton of posts where people have terrible experiences - food chewy, no flavor - the complaints go on and on!!!! It makes this whole Instant Pot super intimidating but in the end I have had nothing but great experiences! (Fingers crossed it continues that way)

What you need:

  • 2 pounds chuck roast

  • 1/4 t salt

  • 1/4 t black pepper

  • 4 cups broccoli

Ingredients for sauce:

  • 1/2 cup beef broth

  • 1/4 cup coconut aminos

  • 1/4 cup date paste

  • (1 Cup Dates, soaked in 1/2 cup very hot water for 5 min ... then blended to make paste)

  • 1 t fresh garlic, minced

  • 2 t fresh ginger, minced

  • 1 t sesame oil

  • 2 t rice vinegar

  • 1/2 t dried cilantro

  • 1/2 t black pepper

To thicken sauce:

  • 1 T tapioca flour

  • 1 T water

What you do:

  1. Slice 1 1/2 pound chuck roast & season with 1/4 t salt and 1/4 t black pepper. Set aside.

  2. In small mixing bowl, whisk sauce ingredients together.

  3. Plug in Instant Pot, and press “Saute”. Allow to heat, then add 3 t Avocado oil. Add beef and brown, turning meat occasionally for about 4-5 minutes.

  4. Add sauce mixture and stir.

  5. Place lid on IP and turn Vent knob to “Sealing”. Press “Manual” and use “+/-“ buttons to adjust cook time to 12 minutes. Once IP pressurizes, 5-10 minutes, cook time countdown will begin. When cook time is complete, IP will beep. Allow IP to naturally depressurize (NPR) for 10 minutes.

  6. While IP is depressurizing, mix tapioca flour and water. Cut and rinse about 4 cups broccoli and place in steamer basket, sprinkle with a pinch of salt if desired, set aside.

  7. Manually release remaining pressure (QPR), then open lid. Smell the AWESOME!!!

  8. Add flour mixture

  9. Place broccoli in steamer basket over beef and sauce. Press “Manual” button and use “+/-“ adjust cook time to 0 minutes, this will allow the IP to pressurize and the broccoli will be tender )

  10. When cook time is up, IP will beep. Quickly release pressure (QPR) by turning vent knob to “Venting”

  11. Remove lid and carefully remove steamer basket of broccoli.

  12. Serve Beef and Broccoli over rice or just dump in a bowl (like me) and enjoy!
