Oatless Oatmeal - Whole30 Breakfast

Whole30 restricts oatmeal because if you have any sort of gut issues (leaky gut, dysbiosis of microorganisms, IBS, bloating, etc.), oats tend to exacerbate those problems and prevent full healing. So when this Oatless Oatmeal popped up in my news feed I was super excited to give it a go. This recipe makes a huge bowl, I couldn't even eat it, but it is laking something and I found the flavor boring, If you make it and find a way to SPICE it up - please be sure to share and let me know! Original Recipe:

Makes one large, voluminous serving

What you need:

  • 3/4 cup egg whites

  • 3/4 cup unsweetened coconut almond milk

  • 1 1/2 tablespoon ground flaxseed

  • 1/2 large very ripe mashed banana

  • 1/2 zucchini, grated

  • 1/2 teaspoon cinnamon

  • Pinch of Salt

What you do:

Combine mashed banana and zucchini in a small bowl. In small saucepan combine egg whites and coconut almond milk, stir with a spatula over medium heat. Add ground flaxseed and continue stirring until mixture begins to slightly thicken. Continue to mix and scrape sides so it does not stick. Add the banana-zucchini mixture and stir as oatless oatmeal begins to thicken. Add cinnamon, reduce heat and continue to stir until oatless oatmeal reaches desired level of thickness. Top with your favorite toppings (berries, nuts, nut butter, unsweetened coconut) and enjoy!
