#Fixified Spinach & Artichoke Dip
One of my FAVORITES!!!! This is one serving and if you wanted to you could easily double it.
What you need....
5 Tbs blended low-fat cottage cheese 1 Tbs 0% Greek yogurt 1/4 cup artichoke hearts chopped 1/4 cup frozen, thawed chopped spinach, squeezed dry 1 Tbs grated Parmesan cheese 2 1/2 Tbs shredded mozzarella cheese salt, pepper and garlic powder, to taste
What you do...
Preheat your oven to 375 degrees. Blend cottage cheese in a food processor until creamy. In a bowl mix all ingredients except 1/2 T of mozzarella cheese. Season with salt pepper & garlic powder and combine well. Put in an oven safe bowl / ramekin, top with 1/2 T of mozzarella cheese. Bake for 20 min or until heated through. Serve with toasted pita!
