Pumpkin Pancakes - 21 Day Fix Approved



REAL TALK: Am I the only one that's not a fan of 'PUMPKIN' everything?? I really do try but other than pumpkin pie I just don't get it!!!

With that being said, here is this year's attempt to get on the pumpkin train.... and let me say while I am not a fan my family liked them a lot

Pumpkin pancakes

2 eggs

1/2 c pure pumpkin

1/4 teaspoon cinnamon

1/8 teaspoon pumpkin spice

1 tsp maple syrup

Whisk all ingredients together

Spray nonstick pan with coconut oil

Heat pan over medium heat

Pour batter to form even pancakes. A

Cook until pancakes begin to bubble and are golden on bottom. (BE PATIENT)

Flip and cook opposite side

Top with 1tsp almond butter , mixed with 1 tsp honey, heated in microwave for 15 seconds to combine and top....
