Double Chocolate Chip Cookies - Fix Approved



Where are my CHOCOLATE Lovers at??? Here is an option for those of you who want to skip the store bought, preservative filled, sugar added treats and opt for a healthy clean tasty cookie!!!! Just another example of how clean eating DOES NOT need to be boring. This recipe is compliments of the Country Heat meal plan ... Nonstick cooking spray 1/4 cup extra virgin coconut oil, melted 1/2 cup unsweetened applesauce 1/3 cup pure maple syrup 1/4 cup lite coconut milk 1/3 cup coconut flour 1/4 cup whole wheat flour 1/2 cup all natural cocoa powder 1/4 cup semi sweet chocolate morsels (or slivered raw almonds, chopped pecans, dried cherries, or raisins) •Pre heat oven to 350 degrees •Lightly coat baking sheet with cooking spray. Set aside. •Combine coconut oil, applesauce, maple syrup, and coconut milk in a medium bowl; mix well; set aside. •Combine coconut flour, whole wheat flour, and cocoa powder in a small bowl; mix well. •Add flour mixture to applesauce mixture; mix until well blended. • Add morsels; mix until blended. •Drop by heaping Tbsp. onto prepared baking sheet. •Bake for 12 minutes or until firm. (Makes 15 servings, 1 cookie each) TIP: for a gluten free version, substitute 1/3 cup brown rice flour for whole wheat flour.
