Fix Approved & Kid Tested Mac & Cheese
Run Don't walk to make this recipe, I adapted it from The Foodie n' Fix, which if you haven't yet checked her blog, you are missing out!!!
My family LOVED this recipe, may be one of their favorites !!!!!!
What you need: For the mac & cheese: 6 cups cooked whole wheat elbow macaroni 4 cups fresh broccoli florets, cooked 1 1/3 cup shredded Monterey jack cheese 1 1/3 cup shredded sharp cheddar cheese 1/4 tsp salt 1 3/4 cup cauliflower puree For the cauliflower puree: 4 cups roughly chopped fresh cauliflower 1/2 cup low sodium chicken broth
What to do: Cook your pasta Steam Cauliflower Steam Broccoli While pasta cooks add cooked cauliflower & chicken broth to blender or food processor, blend until very smooth, measure out about 1 3/4 cup puree Drain pasta Return to pan, put on low heat, add Cauliflower puree, cheeses, broccoli & salt ... stir until cheese melts.... serve HOT!
Container Equivalents: 1 1/2 YELLOW, 1 BLUE, 1/2 GREEN
