Cheesey Cauliflower Casserole



My family and I are BIG FANS of cauliflower so a casserole that couples cauliflower and cheese is right up our alley!

Ingredients

1 Large head of cauliflower

2 T of corn starch

3/4 cup of unsweetened almond milk

1 egg, beaten

1 tsp sea salt

1 tsp fresh ground pepper

1 tsp garlic powder

1 cup shredded mozzarella cheese

2 T grated Parmesan

1 T fresh parsley

Instructions

Preheat the oven to 350 degrees

Steam cauliflower in pot with water or in microwave

In a bowl whisk the almond milk into the cornstarch, then add the beaten egg, salt, pepper, garlic powder & 1/2 cup of the mozzarella cheese.

Add the cooked cauliflower and stir to coat with the mixture.

Pour the cauliflower mixture into a casserole dish. Sprinkle the remaining 1/2 cup of mozzarella on top.

Bake on the top oven rack for 25 minutes, until the top is browned

Sprinkle with Parmesan and parsley, and enjoy!
