Philly Cheesesteak Quesadillas - 21 Day Fix Approved



I LOVE Philly Cheesesteaks almost as much as LOVE Quesadillas - so what's better than putting them together!

Yield: 4 Quesadillas

Container Count per quesadilla: 1 red, 1 blue, 1 green, 1 yellow

Ingredients

  • 1 lb low sodium deli roast beef - I used Boars Head London Broil

  • 8 slices cheese (provolone or cheddar) I used Boars Head Horseradish Cheddar

  • 1 package mushrooms

  • 2 Green peppers sliced

  • 1 Small onion sliced

  • 1 T EVOO

  • 4 whole wheat tortilla

  • Sea salt, garlic powder, black pepper to taste

Preparation

  1. In a skillet, saute' veggies in 1 tsp olive oil until tender, sea salt, garlic powder, black pepper to taste

  2. In a separate skillet warm 4 oz roast beef, I also warmed the tortilla in this same pan (pushed roast beef to side)

  3. Layer ½ the cheese on one side of the tortilla. Add meat and 1 green container of veggies , then layer the remaining cheese, and fold over tortilla

  4. Cook on both sides in skillet
